Chef – Lily Lagoon Resort
Sous Chef
Chef required for Lily Lagoon Resort’s Jacana Restaurant which offers Kununurra dining with an Indigenous flair.
This position carries with it a number of important duties and responsibilities that keeps the kitchen running smoothly.
Key Duties
- Coordinate and organize the activities and duties of the kitchen team
- Responsible for the day-to-day planning and running of the kitchen
- Delegation of responsibilities among the kitchen team
- Implement new policies or changes in the kitchen
- Managing and training of the kitchen team
- Menu planning taking into account customer comments, food facts, trend statistics and other data to determine what comes and goes on the menu as the seasons, food availability or public opinion changes
- Ordering supplies and food, stocking the kitchen appropriately, stock take and dealing with business and long-term planning issues
- Ensure quality and safety of food by performing standard and any additional sanitary measures in accordance with policy and procedures
- Serve as a go-between with the customers and the kitchen staff, addressing complaints or problems with the food, service or other aspects of the restaurant
- Follows recipes, portion controls, and presentation specifications
- Has understanding and knowledge to properly use and maintain all equipment
- Able to work a flexible roster including evening and weekend work where necessary
- Adhere to all WHS practices and ensure kitchen team are aware of safety processes
Requirements of the role
- Completed chef trade qualification
- Previous experience as a Chef de partie
- Demonstrated knowledge of food and catering trends, quality, production, sanitation, food cost controls and presentation
- Superior time management skills, multitasking skills and the ability to priorities tasks with minimal supervision
- Strong work ethic and positive team attitude
Pre-employment requirements
☐ Satisfactory Criminal History Check(not older than 6 months)
☐ Current Australian unrestricted ‘C’ class Driver’s license
