Lily Lagoon Resort: Unique training opportunity

A five-day training program for Aboriginal hospitality workers took place in Kununurra recently.
The program was delivered by WA Food Ambassador Don Hancey and Chef Trainer Mark Attard, and coordinated by Lily Lagoon Resort and Wunan Foundation.
Eight hospitality workers participated in the program, which provided employees hands-on practical learning and the basic principles of hospitality and service.
Long-time chef, radio and TV personality Don Hancey said he was thrilled to be part of the training and gave applause and accolades to Lily Lagoon Resort and its staff.
“This is the start of something really big – Lily Lagoon Resort has all of the ingredients for success. It’s going to be the benchmark for Indigenous tourism in the Kimberley. This is a whole new concept, nobody else is doing what we’re doing here,” he said.
“The resort is an Indigenous-led venture operating in an international tourism destination. The Kimberley, its culture, and its food are unique. “
“The resort has a new head chef, Jamie Dallas, who is highly skilled, and has the passion and ambition to take the restaurant forward.”
The resort unveiled its first menu concept at an exclusive tasting event on Friday, which saw more than 20 guests in attendance.
The menu has been carefully crafted to include Australian native foods, introducing bush flavours to locals and tourists visiting Kununurra.
The selection of mouthwatering dishes include kangaroo skewers with desert raisin relish, barramundi gijon’s with wild lime and pepper leaf mayo, kangaroo arancini and poached prawns with mango mayo.
The opening of the resort and its restaurants will coincide with Kununurra’s peak tourism season and will create employment opportunities for Aboriginal people in areas including tourism, hospitality, administration and maintenance.
All profits from Lily Lagoon Resort will be used to fund Wunan Foundation programs to support its mission creating socioeconomic opportunities for Aboriginal people in the East Kimberley.
